Fresh is the name of the game at Pedro’s. Whether it’s homemade tortillas, garden salsa verde or house guacamole made with ripe avocados, don’t expect anything to come out of a can at this Clinton culinary landmark. Drop in for lunch or dinner and you’ll see why Pedro’s has been a local favorite for more than a decade.
You’ll want to start off with a frozen margarita, served up in a frosty goblet with salt and a lime wedge. It’s the perfect companion to an endless basket of chips and Pedro’s selection of spicy salsas. Move on to some authentic Durango-style tacos—carnitas and barbacoa are always a good choice—or go for the Tex-Mex hard shell and ground beef variety instead. Whatever your taste, it’s sure to be satisfied at Pedro’s.
If you’re looking for something beyond the standard fare, you won’t be let down by the asado de puerco, served in a rich, smoky red sauce with rice and beans. For a good-for-the-soul winter warmer, try the caldo de pescado, a hearty fish soup with shrimp and veggies. (You might have to wait for this delectably fresh concoction, but regulars will assure you it’s worth it.) Finish that off with a cup of creamy horchata and an order of churros for the table, and you won’t be able to drive on I-40 through western Oklahoma again without a quick stop at Pedro’s.
